Maple and salmon is one of nature's perfect pairings. The sweetness of the maple balances the richness of the fish, while the smoke adds depth. This is an elegant dish that's surprisingly easy to make.

Maple Cure
Glaze (for basting)

Cure the salmon
Mix cure ingredients and pour over the salmon in a dish. Refrigerate for 2-4 hours (or overnight for stronger flavor).

Dry the surface
Remove salmon from cure, pat dry, and place on a wire rack for 30 minutes until a tacky pellicle forms on the surface.

Smoke low
Set smoker to 200°F with maple or alder wood. Smoke salmon skin-side down for 60-75 minutes.

Glaze
Mix maple syrup and melted butter. Brush salmon with the glaze at the 45-minute mark and again at 60 minutes.

Finish
Salmon is done when it flakes easily and reaches 145°F internal. The surface should be a deep golden color.
Serving Suggestions
Serve as a main course with grilled asparagus, or flake it over salads and bagels. Keeps for 3-4 days in the fridge.
