Instructions

1

Prep the ribs

Remove the membrane from the bone side. Apply mustard as a binder, then coat generously with the rub. Let sit for 30 minutes.

2

3 hours unwrapped

Smoke at 225°F with maple or hickory wood, bone side down, for 3 hours. Spritz with apple juice every hour.

3

2 hours wrapped

Lay ribs on foil, drizzle with maple syrup, apple juice, and butter. Wrap tightly. Return to smoker at 250°F for 2 hours.

4

Make the glaze

Combine maple syrup, BBQ sauce, apple cider vinegar, and butter in a saucepan. Simmer 5 minutes until thickened.

5

1 hour glazed

Unwrap ribs and brush thickly with maple BBQ glaze. Return to smoker at 275°F for 1 hour, glazing every 20 minutes.

6

Rest and serve

Rest for 10 minutes. The glaze will set into a sticky coating. Cut between bones and serve.

Serving Suggestions

Let rest 10 minutes before cutting between the bones. The glaze will set into a sticky, caramelized coating.
