Hot & Fast BBQ Spare Ribs

Not everyone has 6 hours for ribs. This hot and fast method cooks spare ribs at 325°F, cutting the cook time nearly in half while still delivering tender, flavorful ribs with a nice bark. The key is careful wrapping and moisture management to prevent drying out at the higher temperature.

Prep and season

Remove membrane from bone side. Apply mustard binder and coat generously with the rub on both sides.

Initial cook

Set smoker or grill to 325°F. Place ribs bone side down and cook for 1.5 hours uncovered. The higher temperature builds bark faster.

Pro tip: Check your ribs at 1 hour — at higher temps, bark can form faster than expected.

Wrap tight

Place each rack on heavy-duty foil. Add butter slices and a splash of apple juice. Wrap very tightly — the seal is even more critical at higher temperatures to prevent drying.

Power through

Return wrapped ribs to the smoker at 325°F for 45 minutes until the meat is very tender and pulls back from the bones.

Sauce and finish

Unwrap, brush with BBQ sauce on both sides, and return to the smoker unwrapped for 15 minutes to set the sauce.

Rest 10 minutes. Slice and serve. Total cook time: about 2 hours 45 minutes — less than half of a traditional low-and-slow cook.
