Form the balls
Divide ground beef into 8 equal balls (about 2 oz each). Season generously with salt and pepper but do not overwork the meat.
Heat the griddle
Preheat your flat-top griddle or cast iron skillet to maximum heat, around 500-550°F. Add a thin layer of vegetable oil.
Pro tip: The griddle must be smoking hot — this is the key to the crispy crust.
Smash the patties
Place a beef ball on the griddle and immediately press down firmly with a sturdy spatula or burger press. Hold for 10 seconds to flatten to about 1/4 inch thick. Repeat with remaining balls.
First side cook
Cook without moving for 2-3 minutes until the edges are deeply browned and crispy. You should see the crust forming around the edges.
Flip and cheese
Use a thin spatula to scrape under each patty, keeping the crust intact. Flip and immediately place a slice of American cheese on each patty. Cook for 1 more minute.
Assemble
Toast buns on the griddle for 30 seconds. Stack two patties per bun. Add pickles, diced onion, mustard, and ketchup. Serve immediately.
