In a small saucepan, combine the vinegar, wine, shallots, and half of the tarragon. Simmer over medium heat until reduced to about 2 tablespoons, approximately 5 minutes. Strain and cool slightly.

Whisk the egg yolks
In a heatproof bowl, whisk the egg yolks until thickened and pale. Set the bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water.

Add the reduction
Slowly whisk in the strained vinegar reduction into the egg yolks until well combined and thickened.

Incorporate the butter
Gradually add the melted butter in a thin stream, whisking constantly until the sauce is thick and creamy.
Pro tip: Ensure the butter is warm, not hot, to avoid breaking the sauce.
Season the sauce
Stir in the remaining tarragon, salt, and black pepper. Taste and adjust seasoning if necessary.

Serve immediately
Transfer the sauce to a serving dish and serve warm. If needed, keep the sauce warm over a bain-marie.
