Bacon-Wrapped Stuffed Dill Pickles

These bacon-wrapped pickles are the ultimate BBQ party snack. Whole dill pickle spears are stuffed with seasoned cream cheese, wrapped in bacon, and grilled or smoked until the bacon is impossibly crispy. The combination of tangy pickle, creamy filling, and salty bacon is absurdly good.

Dry the pickles

Pat each pickle spear thoroughly dry with paper towels. Excess moisture will prevent the bacon from crisping. Let them sit on paper towels for 10 minutes.

Pro tip: This drying step is the key to crispy bacon — skip it and you get soggy results.

Make the filling

Mix softened cream cheese with shredded cheddar, garlic powder, onion powder, and cayenne until well combined.

Stuff the pickles

Cut a slit lengthwise down each pickle spear, about halfway through. Pipe or spread the cream cheese mixture into the slit generously.

Wrap and season

Wrap each stuffed pickle tightly with a slice of bacon, starting from one end and spiraling to the other. Secure with a toothpick if needed. Sprinkle lightly with BBQ rub.

Grill or smoke

For grilling: cook over medium heat (350°F) for 20-25 minutes, turning every 5 minutes. For smoking: smoke at 275°F for 25-30 minutes. Cook until bacon is crispy on all sides.

Rest for 5 minutes (the cream cheese is very hot inside). Remove toothpicks. Serve on a platter with ranch dressing.
