Instructions
Score and arrange
Score the ham surface in a diamond pattern. Place in a large aluminum pan. Pour apple cider into the bottom. Arrange apple slices over the top of the ham and drape bacon strips across.
Make the glaze
Heat apple jelly, brown sugar, Dijon, and vinegar in a saucepan until smooth and combined.
Smoke the ham
Set smoker to 275°F with apple wood. Place the pan on the smoker. Smoke for 2 hours, basting with pan drippings every 30 minutes.
Add carrots
Toss carrots with honey, melted butter, cinnamon, and salt. Add them to the pan around the ham. Brush the ham generously with the apple jelly glaze.
Finish
Continue smoking for 1 more hour, glazing the ham every 15 minutes, until the ham reaches 140°F and the carrots are tender and caramelized. The bacon on top should be crispy.
Rest and serve
Rest ham for 15 minutes. Carve and serve surrounded by the glazed carrots. Spoon pan juices over everything.
