Prepare the lamb
Preheat your oven to 425°F (220°C). Pat the leg of lamb dry with paper towels. Using a sharp knife, make small incisions all over the lamb and insert a garlic sliver and some rosemary into each cut.

Season the lamb
Rub the lamb with olive oil, then season all over with salt and black pepper.

Roast the lamb
Place the lamb on a roasting rack in a pan. Roast in the oven for 20 minutes, then reduce the temperature to 350°F (175°C). Continue roasting for approximately 20 minutes per pound, or until the internal temperature reaches your desired doneness (see table below).
Check doneness
Use a meat thermometer to check the lamb's temperature: 125°F (52°C) for rare, 135°F (57°C) for medium-rare, 145°F (63°C) for medium. Insert the thermometer into the thickest part of the meat, avoiding the bone.

Rest the lamb
Once cooked, transfer the lamb to a cutting board and cover with foil. Let it rest for 15-20 minutes before carving.
