Directions

Step 1: Prepare Sarson Ka Saag

  1. Boil mustard greens, spinach, and bathua with 1 cup of water for 15-20 minutes until soft.
  2. Mash the greens using a wooden masher or blend for a smoother texture.
  3. In a pan, heat ghee/mustard oil and add cumin seeds. Once they splutter, add garlic, ginger, and green chilies. Sauté for 1 minute.
  4. Add chopped onions and cook until golden brown. Then, add tomato puree, turmeric, red chili powder, and salt. Cook for 5 minutes.
  5. Stir in the mashed greens and cook on low heat for another 15 minutes.
  6. Mix maize flour with 2 tablespoons of water to form a paste, then add it to the saag to thicken the curry. Simmer for 5 more minutes.
  7. Finish with garam masala and serve hot.

Step 2: Prepare Makki Ki Roti

  1. In a bowl, mix maize flour and salt, then gradually add warm water to form a soft dough.
  2. Divide the dough into equal portions and roll each into a thick flatbread. (Use a plastic sheet to help shape it if needed.)
  3. Heat a tawa (griddle) and cook each roti for 2-3 minutes per side. Apply ghee or butter and cook until golden brown.

Step 3: Serve & Enjoy

  1. Serve hot Makki Ki Roti with Sarson Ka Saag, topped with butter and jaggery on the side for an authentic Punjabi experience!
